F.O.G. - Fats, Oils and Grease

Businesses (Restaurants)

Pleasanton has become a center for diverse dining experiences. As more restaurants open in Pleasanton, proper disposal of fats, oils and grease (FOG) becomes increasingly important. Improper disposal of FOG from cooking can create problems for both business owners and City of Pleasanton maintenance crews if the sewer system plugs. The City of Pleasanton wants to work with businesses to help create a clean, environmentally friendly atmosphere that will maintain a positive image and profitable experience. The guidelines below are intended to help businesses understand how simple it can be to avoid expensive cleanup costs by taking some basic precautions.

Listed below are some very basic guidelines or Best Management Practices (BMP) for proper disposal of FOG. Following these guidelines will greatly reduce problems for business owners and the City of Pleasanton.

  1. Dry wipe all food waste
  2. Block drains from spills
  3. Use approved storage bins
  4. Clean grease removal devices

Pleasanton is part of the Alameda County Clean Water Program (ACCWP). To help assist businesses in Alameda County, ACCWP has developed BMP’s for restaurant. Click on one of the following links to find out more.

Whether an above ground grease trap or an underground grease interceptor is used, it is important to maintain the devices. Part of that process involves contacting a reputable grease hauler to properly dispose the FOG.
